White Chocolate Party Mix

Week 10 of the 52 Week New Recipe Challenge brings a tasty sweet snack mix. I was asked to make a goodie bag of “something” by the chair of an event at school for a basket. They needed 32 of each goodies so I found this white chocolate party mix in my “to try” recipe file and thought it would be perfect. Plus, it looked easy which was perfect for my busy week. I had just about all of the ingredients on hand – another plus! One batch made the required 32 bags. You could easily make substitutions that suit your liking but I think omitting the M&M’s and adding chocolate chips or carob chips would be a nice mix up. I used Crispix cereal but you could use Golden Grahams or Chex. Almond slivers could easily be substituted for the peanuts. Mixed nuts might also be nice. I truly loathe melting chocolate in a microwave but I did. On the rare occasion that I do melt chocolate in a microwave, I start slow, less than the recommended time and stop to stir. Then I move on from there in 30 second increments. When mixing my concoction, I used two wooden spoons to keep my hands clean. If you are just making this for your family or a party, not to put in goodie bags, you can spread out on wax paper lined baking sheets and then break up into a serving bowl. I put the baking sheets in the refrigerator for a few minutes to set quickly.

White Chocolate Party Mix

5 cups doughnut-shaped oat cereal (like Cheerios)

5 cups bite-size crispy corn cereal (I used Crispix)

1 (10 ounce) package mini pretzel twists

2 cups salted peanuts

16 ounce package candy-coated chocolates (like M&M’s)

2 (12 ounce) packages white chocolate chips

3 tablespoons canola or vegetable oil

Combine cereals, pretzels, peanuts and M&M’s in a large bow and set aside.

Combine white chocolate chips and oil in a microwave safe bowl and heat on medium-high for 2 minutes, stirring once. Pour over cereal mixture and stir well, although gently, to coat. Spread onto 3 wax paper lined rimmed, baking sheets to cool completely. Break apart when cool. Store in an airtight container.

Makes 5 quarts.
